Use the coolest vintage pilsner glass you can find, and freeze ahead. If cherries are out of season, swap with Morello Cherries, and use liquid from the jar instead of simple syrup.
INGREDIENTS
60ml Ester Dry Gin
20ml fresh lemon juice
10ml simple syrup
3 cherries, pitted
40ml sparkling water
15ml burrata water
GARNISH
Maraschino cherry or lemon twist
METHOD
Add the soda to the chilled glass. In a cocktail shaker, shake all other ingredients hard with plenty of ice, straining over the soda water.
