This month, we head to Melbourne’s east, where a suburban warehouse in Mitcham hums with creativity and the clink of copper pot stills at work. At Dutch Rules Distilling Co., a passionate team is rewriting the rulebook on gin; crafting spirits that honour tradition while daring to do things differently. We’re thrilled to feature their Thai Gin this month – a spirit born from a happy accident and elevated into a standout expression of flavour.
If ever there was a distillery with personality, it’s Dutch Rules. Founded in 2022 by hospitality veteran Danny Perera, Dutch Rules Distilling Co. is the culmination of a journey that spans continents, industries, and a love of bold flavours. Danny grew up in Sri Lanka, before moving abroad to study microbiology in Melbourne. Amongst the bustling café culture, it wasn’t long before a part-time hospitality job pulled him in a different direction. “Working at a bar, I realised that this was in my genes,” he says. “I loved talking to people and creating experiences — that was my industry.”
In 2017, he co-founded Two Rupees in Clayton, a brewery with a distinctly Sri Lankan twist. The beer — think a white ale infused with Sri Lankan spices — quickly earned a loyal following, leading to the opening of a taproom in Clayton. When COVID-19 disrupted the beer scene, Danny turned his focus to a newfound passion: distilling.
Striking out on his own, he transformed a Mitcham warehouse into Dutch Rules Distilling Co. – a spirit-forward playground for his creative ambitions. But getting a distillery off the ground was no small task. Navigating the maze of regulations, licenses, and steep upfront costs was a daunting challenge, but Danny’s determination to create something truly unique saw him through. The crowded craft spirits market demanded not just great gin, but a strong identity – and Dutch Rules would deliver both in spades.
Inspired by the spice trade of the Dutch East India Company in the 17th and 18th centuries, the distillery crafts bold, imaginative spirits that honour tradition while embracing modern flair. And the name? Conveniently doubles as a cheeky nod to gin’s Dutch roots. Gin traces its origins back to Genever, a malted Dutch spirit that laid the groundwork for the gin we know and love today. It also reflects a broader philosophy: the Dutch ethos of freedom, creativity, and fun – an attitude infused into everything Dutch Rules does, from the daring flavours of their spirits to the charm of their Mitcham home.
Fortunately, Danny isn’t steering this ship solo. He’s backed by a stellar crew: head distiller Brad Dickman (formerly of Mountain Goat Brewery fame), marketing and events whiz Sai Merchant, social media maven Jessica Ziegler, and creative gurus Clint Weaver and Tim Munro from design studio Pocket Beagles.
When launching their debut gin, New World Dry Gin, it had to make a splash – and it did. With 15 botanicals, including Sri Lankan gunpowder tea and Indian coriander seed, it’s a bold, citrus-forward take on a classic style. Within months of its 2023 release, it earned a silver medal in the New World/Contemporary Gin category at the Australian Distilled Spirits Awards, cementing Dutch Rules as a force to be reckoned with.
Since then, Dutch Rules has fast become a staple in Melbourne’s hospitality scene, with their gins pouring in over 100 venues, including local icons like Gin Palace and Chin Chin. But this is just the beginning! The team has big ambitions to expand their lineup, collaborating with local producers, and eventually take their creations global.
Sustainability is a key focus for Dutch Rules, too. Botanicals are sourced locally wherever possible, leftovers are composted or repurposed, and their bottles are designed to encourage reuse. For Danny and his team, it’s about doing things better – for the planet and for their customers.
Every great gin has a story, and the one behind Dutch Rules Thai Gin might just be the most unexpected. It all started with a classic lunch break – head distiller Brad digging into his favourite Thai green curry from the restaurant next door, and a classic gin and tonic. Then, fate (or perhaps clumsiness) intervened: a splash of curry found its way into his drink. Most would call it a disaster, but Brad? He took a sip – and an idea was born.
Turning that happy accident into a fully realised gin was no small feat. Brad wasted no time experimenting, crafting three initial versions that came tantalisingly close to perfection. Each attempt highlighted the potential of the bold botanicals, but something was still missing – a key ingredient to tie it all together. This, ultimately, was the humble coconut cream. Its velvety texture and rich oils added the perfect balance, elevating the flavours and bringing the recipe to life.
Dutch Rules Thai Gin is packed with botanicals that read like the recipe for any great Thai dish: coriander seed, makrut (kaffir) lime leaves, lemongrass, Thai basil, Bird’s Eye chilli, and, of course, coconut cream. As the team puts it, “It’s like a wild Thai feast doing the cha-cha in your mouth.”
On the nose, this gin immediately grabs your attention with vibrant bursts of zesty lime, the fresh, grassy notes of lemongrass, and the distinctively aromatic punch of Thai basil. The first sip delivers, opening with a velvety coconut creaminess that smooths the way for lively citrus notes to shine through. As the flavours unfold, a gentle warmth from the Bird’s Eye chilli sneaks in, delivering just the right amount of spice – a playful kick that lingers. The finish is well-rounded, with delicate hints of spice and herbal freshness.

Nestled just off Whitehorse Road in a warehouse that manages to feel both industrial yet intimate, Dutch Rules is as much about experience as it is about flavour. Conveniently located close to public transport, it’s an easy spot to visit for gin lovers looking for something unique.
The space oozes character, with high ceilings, exposed brick, and a glowing copper pot still named Willbert (a heartfelt tribute to Danny’s dad) as its centrepiece. Add a carefully curated vinyl collection spinning in the background, and you’ve got a space that strikes the perfect balance between cosy and cool.
Visit, and you’ll have the chance to explore their spirit range through tasting flights or savour them in creative cocktails like a Bellini spiked with passionfruit sorbet. And if gin isn’t your thing (we’ll try not to judge), there’s a small but thoughtfully curated selection of local wines and beers.
In the kitchen, Danny has enlisted Dan Greenwood (formerly of Brunswick’s Naked for Satan) to craft a dining menu designed to perfectly complement their bold gin flavours.
While their Thai Gin takes centre stage this month here at Garden Street, Dutch Rules’ lineup is packed with plenty of standouts. Their flagship New World Dry Gin reimagines the classic, offering a versatile and fresh citrus-forward base.
For those who prefer their gin with a bit more punch, there’s Officer’s Cut, a navy-strength powerhouse clocking in at 58% ABV. This gin doesn’t just pack heat – coastal botanicals karkalla and toasted seaweed give it a savoury edge while juniper keeps it classic. Bold yet refined, it’s a drinkable ode to the sea. And for vodka fans, their ultra-smooth, clean offering is a favourite among bartenders.
There’s more excitement brewing, too. Danny and the team are putting the final touches on two highly anticipated releases: Dutch Ceylon Gin – inspired by the rich spices of Sri Lanka, and a Coffee Liqueur that is designed to delight espresso martini enthusiasts everywhere.
