Journey no more than 300km north-east of Melbourne, and you’ll find yourself in Rutherglen; dainty in size, but immense in character. This historic town, nestled along the Murray River, is one of Australia’s most celebrated wine regions. It’s a place where bold reds and iconic fortifieds meet a thriving food scene that champions local produce and passionate makers. Among the cellar doors and gourmet providores, a new kind of craft has emerged; one that distils the region’s character in a whole new way.
Set against the backdrop of century-old wine cellars and sunlit river flats, Three Chain Road Distillery operates from within the heritage walls of Buller Wines. Here, gin, whisky and brandy are shaped not only by stills and barrels, but by the rhythms of the region, its terroir, its legacy, and the ingenuity of those who know it best.
Their Southern Citrus Gin is a shining example of that philosophy. Inspired by the bright, sun-drenched citrus of the Murray region, this gin was crafted to feel instantly refreshing and vibrant, a tribute to Australian summers.
To understand where this gin comes from, you need to start with the cellar it was born in, and the winemaker who couldn’t resist quietly filling a few barrels.
About the Distillery
David Whyte, head winemaker at Buller Wines, had long been fascinated by the idea of making whisky. With more than 15 years of experience crafting fortified wines such as Tawny and Muscat in Rutherglen, his palate was finely tuned to blending and maturation. But, as anyone in the industry knows, whisky is a long game and in a busy winery, tying up capital and space for years without return wasn’t an easy sell.
Nevertheless, David went ahead anyway. Just a couple of small barrels, laid down on the side experimentally; a passion project of sorts.
What happened next surprised even him. Those first casks turned out to be exceptional: layered, expressive, full of promise. When his business partners, Michael Murtagh and Gerald Judd, tasted them, they knew they had something worth pursuing. Together, the three shared more than just a fondness for flavour. They were also co-owners of Buller Wines, bringing a powerful combination of winemaking expertise, business acumen, and hands-on regional experience. The idea of a distillery began to take shape.
“Being surrounded by world-class fortifieds, incredible local produce and a winemaking facility rich in history, it made perfect sense to expand into spirits.”
So, they invested in a still, affectionately naming it Winston in honour of Winston Churchill’s well-documented fondness for gin. As Churchill once famously quipped, “Gin & tonic has saved more Englishmen’s lives, and minds, than all the doctors in the Empire.” With that, Three Chain Road Distillery was officially born.
The vision was to create spirits that captured the essence of the Rutherglen region; spirits with depth, identity, and a clear line back to the land. While whisky may have lit the spark, gin quickly became the name of the game.
“Rutherglen is home,” the team says. “It’s a region with deep roots in winemaking and fortification, and that history naturally led us into creating spirits with a wine-driven edge.”
It’s a philosophy most visible in their Rare Muscat Gin and Shiraz Gin, which showcase fortified influence in both character and craft. “Local citrus, botanicals and wine influence give our spirits a distinctly Rutherglen character.”
Meanwhile that hyper-local approach extends seamlessly to their sourcing. “In the name of research, we may have ‘borrowed’ a few lemons from unsuspecting locals to find the best citrus trees in the region,” they joke. “Our distillery team became expert scouts, tracking down heirloom trees with exceptional fruit.”
The distillery’s name, too, is anchored in place. Three Chain Road was the original name of the road that runs past the property, once the main stock route between Melbourne and the customs houses in Wahgunyah and Corowa. A ‘chain’ is 22 yards, the length of a cricket pitch, meaning the road was an impressive three chains wide.
Today, the winery and distillery operate side by side, each drawing from and contributing to the other. And while the barrels are no longer hidden in a corner, the hands-on and daring spirit of that original experiment still defines everything they do.
About the Gin
If Rutherglen had a flavour, it might just be this.
Southern Citrus Gin is a vibrant, sun-soaked expression of place: a gin that captures the brightness of the Murray region’s fruit and the precision of winemaking craft. Inspired by the heirloom citrus trees scattered across Victoria and the greater Murray, it was designed to feel instantly refreshing.
At the heart of this gin is real, fresh flavour. Every lemon and orange used in the distillation is organic, carefully sourced and hand-peeled by the distilling team to preserve the purest citrus oils. It’s a meticulous process, but one that delivers lifted aromatics, zesty freshness.
“We trialled around nine different recipes,” the team explains. “The process came down to sourcing fruit from heirloom citrus trees around Rutherglen, each offering different skin thickness, oil intensity and flavour profiles.”
Bright lemon and lime zest leap from the glass, supported by juniper, grapefruit oil and soft herbal notes. The palate is bold and citrus-forward; think kaffir lime, lemon myrtle and clean spice. The finish lingers long and dry, all fresh zest and subtle florals. With such bright flavours dancing across the palate, Southern Citrus Gin pairs beautifully with fresh seafood like prawns, scallops and oysters, soft cheeses, and grilled chicken with lemon and herbs. Making it the perfect pour for late-summer gatherings.
As for that ABV? “Yes, 52% is quite a strong gin,” the team admits. “But once we started to cut it down, we found it lost a lot of its fresh zest and intensity below 48%.” The higher strength carries bold citrus oils beautifully; it holds its own in a G&T, stands tall in cocktails, and still offers a smooth sip served neat.
Even the bottle tells the story. Wrapped in layered illustrations of oranges, lemons and sunlit leaves, the label signals brightness before the cork is even popped. “The colour palette is deliberately vibrant and warm,” the team says. “It directly reflects the gin’s flavour profile.” Real citrus peels are also featured in the design, curling around the label like the botanicals do in the still.
Southern Citrus Gin is the ultimate expression of regional craft; a spirited tribute to the citrus groves, glowing skies and slow, golden evenings of the season.

Tucked among century-old vines and lush gardens, the home of Three Chain Road feels less like a cellar door and more like a countryside escape. Set on the historic grounds of Buller Wines, the distillery shares space with one of Rutherglen’s most iconic wine producers, a property shaped by generations of craftsmanship, and still brimming with old-world charm. It’s a pairing that makes for a uniquely immersive experience.

For those drawn to the deeper layers of production, Buller Wines offers a guided look behind the scenes, with rare, fortified wines tasted straight from the barrel.

And the magic doesn’t stop there. In 2026, the team is bringing back a few fan favourites, including the Pomegranate and Ruby Grapefruit Gin and the Apple and Rhubarb Gin, with whispers of a limited Truffle Gin release on the cards.
