A play on a ‘white lady’. Since it’s notoriously difficult to split an egg white in half, feel free to use it all... or call in a friend and double the quantity! INGREDIENTS 45ml Mallee Spirit Myrtle Gin 30ml lemon juice 15ml simple syrup 1/2 egg white (or 15ml aquafaba) 15ml Triple Sec or Cointreau GARNISH Fresh lemon twist METHOD Add all ingredients to a cocktail shaker without ice, shake well. Add ice, and shake vigorously for 20-30 seconds until well chilled. Strain into a chilled coupe glass and garnish with a lemon twist. Enjoy!
